Savoy quickly becomes a star in the vegetable garden due to its versatile use. The cabbage with the strikingly wavy leaves can maintain its position almost all year round. It is also possible to cultivate the savoy cabbage so that nobody has to do without homemade cabbage roulades.
While red and white cabbages first have to form a firm head before they can be harvested, the first tender leaves can be removed from the savoy cabbage. These are particularly tasty when added to salads. If the leaves are firmer, they are suitable as hearty vegetables, briefly seared or blanched.
When can savoy cabbage be harvested?
It depends on the variety. Already in early summer, e.g. harvest the young leaves of summer savoy. You can do the same with the late savoy cabbage. Then the harvest of the first leaves falls in autumn. Since a distinction is made between early savoy and summer savoy or late savoy, the harvest time can be extended to almost the whole year.
How are individual leaves harvested?
Individual leaves of savoy cabbage are always cut from the outside in. Use a sharp knife and avoid injuring the middle of the cabbage so that the plant continues to form new leaves.
By gradually harvesting the savoy cabbage leaves, the harvesting time can be extended because new leaves are constantly being formed.
How is the whole cabbage harvested?
If a sufficiently large and firm savoy cabbage has developed, you can cut it directly under the head with a sharp knife. You must then remove the outer leaves before storage.
To prevent the spread of pathogens, you should dig out the roots of the savoy cabbage after the harvest and dispose of it.
In order to make the savoy cabbage more storable, you can dig it out completely with the root. This is useful if you are looking for a longer storage period. Sliced cabbages can then be kept in the refrigerator for about a week. Stored cool and dry, the durability of the cabbages can be doubled.
What should you watch out for during storage?
If the savoy cabbage is harvested, it is usually not possible to use it immediately. Therefore it is important to store the vegetables correctly. To keep savoy cabbage as long as possible, there are a few things you should consider. For the harvest you need e.g. always use a clean and aseptic knife. This can prevent germs from settling in the cabbage, which prevent them from being stored for a long time. You must also remove any dirty leaves that have been eaten by insects or yellowed and appear unsightly. If there are still pests on the savoy cabbage head, you must of course remove them.
The savoy cabbage should not come into contact with water before storage, as this would have a negative effect on the storage time.
Note differences in shelf life
There are definitely differences between the storage period and the savoy cabbage. The early varieties have the shortest shelf life. You should therefore consume early varieties as soon as possible. Most species can only be kept in the fridge for a few days. The later varieties, on the other hand, appear more robust and therefore also have a longer shelf life. After a week in the refrigerator, you should process the savoy cabbage as soon as possible.
Storage in the refrigerator
The freshly harvested savoy cabbage heads can be stored in the refrigerator. However, this storage method is only to be regarded as short-term. The savoy cabbage should be processed after four to seven days at the latest.
You should never keep savoy cabbage near fruit, because fruit emits the ripening gas ethylene, which in turn ensures that the shelf life of vegetables is reduced and that rotting is promoted.
Storage in the basement
Savoy kept in a cool, dark place in the cellar lasts the longest. The cabbage can be stored here for up to two weeks. You can pack the cabbages in boxes. Savoy cabbage stays fresh longer when wrapped in newspaper. If you remove the cabbage completely with the stalk, it can also be easily attached to the ceiling, saving space.
Can you also freeze savoy cabbage?
To preserve the vegetables and have them available longer, you can also freeze the cabbage. However, some preliminary work is necessary for this. First of all, you have to wash the individual leaves. You should then cut the cabbage into strips that are in portions and blanch briefly. Now you can distribute the vegetables in freezer bags or freezer tins and freeze them straight away. The savoy cabbage then stays in the freezer for up to six months.
